I had the idea of using a sort of radiator on the cooling vent inlet side. Warm humid air runs acrross the radiator that is cooled by water pumped throught it. It would act as a de-humidifer. This dehhumidified air would the be pulled into the rest of the system/slash house. Viola!

If all goes to plan we will be heading down your way to live in the next year or there abouts. And hoping to build … probably a combination of straw bale, cob and stone with the wood used milled on site.
